Chicken burger

The quality of the produce really makes a different, I used to buy my chicken from coles or woolworth's fresh produce counter. A few years back, I tried lilydale free range chicken, never buy anything else again. It is succulent, tender and taste like chicken. I know, sounds a bit funny that it taste like chicken, once you have it and if it's cook properly, you'll know what I mean. 


I pre-heat the oven while I prep the sweet potato, the side is sweet potato fries. After I fired it, I put it in a tray with something to absorb the oil, and keep it crunchy and in there till everything else is ready.

I coated the chicken with thin layer of batter, and deep fried it. Took it out and dipped in the batter again and fried till the bottom is golden brown, then flip it. 
While the chicken is frying, chop the onion, put some salt and stir fry it. Put the bun in the oven with the sweet potato fries. Once the chicken is golden brown, press it to be sure it's half firm, then put it in the oven for about 3-5 mins to rest. 

It's a quick 20-30 min meal, the fryer and the oven does most of the work. And its only about 5-6 dollar for two portions, it was a big chicken, I only used 1 chicken breast.

pork salad

Another dish for the warm summer days. I used pork mince, basil, bread crumb, fish sauce and egg. Made a pork cake, it's like fish cake but it's pork. The pork cake itself is delicious, kind of like those little nipples you get at the parties, just can't stop having it. Packed with flavors and savoy. 

The base is a refreshing, mint salad with tomato, cucumber and grapes. I didn't put any dressing, just a little olive oil and salt.

It was fruity an refreshing. I think this is much better choice than a normal leaf salad with pre-made dressing. It's really simple too. Takes about 15-20 mins to make.

I made this on a really hot day, I was just taken by the heat and didn't want to turn on the stove.

I have marinated tofu last night with soy sauce, garlic, ginger and sugar.
it is dressed withe the marinated and fresh ginger. I grow basil and it is flowering so I pick the bud and the top leaf as garnish, the bud gives it an amazing aroma.

The smoked salmon is wrapped around water melon and top with pesto I made, it's mainly basil with a little oregano and very little garlic to give it that kick, also a little pine nuts and chest nuts. 

The cucumber is sliced thinly and dressed with japanese mandarin radish sauce.
The idea is have something mild and sweet- the salmon and water melon, then something refreshing but with a bit a kick(the japanese sauce is a little hot like washbi) then something that's creamy yet refreshing from the taste of  ginger.

I have always loved this dish, it's been several trail and error. Haven't had a chance to order it at a restaurant, so I am assuming this is how it should taste like. 

I don't really do recipes, unless it's a dish that I have no idea how to make, but even then, I still follow the recipes. I just put what I have in the frig together. As long as I have the main ingredients.

I must say this is a little more work, there are spinach, capsicum, and mushroom, all cooked before wrapping in the pastry. 
I sear the beef, unfortunately it is a bit over cooked..., I am still learning what this electric oven do. 




grill pork with Jerusalem artichoke

I would like to think I'm a foodie, but to my surprise when I had this dish at a restaurant, I have not had anything that's on the plate expect for the barramundi, I have not even heard of the rest of the ingredient. I loved everything on the plate, kale, grey ghost, and Jerusalem artichoke. 

This is my own dish inspired by that dish.


Grilled pork, Jerusalem Artichoke mesh with oregano, white mushroom,
 fried Jerusalem artichoke and fried Jerusalem artichoke skin with the pork's glaze. 


Jerusalem artichoke done three different way, and they taste completely different. it is amazing. The fragrant of it in the mesh is the most noticeable. The fried bits absorb the glaze, making it taste sweet and with the flavor of the pork. The fried Jerusalem artichoke skin is with batter, make is crunchy on the outside and spongy on the inside. 

The mushroom is seasoned with salt ad pepper, keeping it simple.
I fired the oregano and sprinkled it. The pork is grilled and infused with rosemary and olive oil. 

Took me about 45 mins from prep and finishing the dish. It's a healthy and amazingly delicious dish. 

Jerusalem artichokes have also been promoted as a healthy choice for diabetics. The reason for this being the case is because fructose is better tolerated by people that are diabetic. The artichoke contains about 10% protein, no oil, and a surprising lack of starch. However, it is rich in the carbohydrate inulin (76%), which is a polymer of the monosaccharide fructose. Tubers that are stored for any length of time will digest its inulin into its component fructose. 

Cost for two is about 8 dollars total.

Koi series

After my trip to China for work, I was inspired by a piece of artwork in Shanghai. I saw this wonderful Koi pond, they would come up whenever you walk by, I was really drawn by how they behaved. I made a series of white ceramic plates with water drops representation of water splashes they make as they swimming pass, to give you a sense of motion captured in a snap shot.

I adopted the style of Chinese brush painting that relies on free strokes and shuns details.and drawn basing on memory. 
I have drawn them in pairs, as you rarely see solitary Koi



First one here, two swimming towards each other, forming a circle. There are another two circling in different direction again.





The details are consistence to the base, you can see that there are water drop at the base of the bowl.

Second one, you have a smaller koi circling the larger koi that is resting. 





Another on that's resting at the base, avoiding the traffic.



Third one, the koi is swimming towards the surface, another in hiding at the edge.




Forth one, is only on it's own exploring, have a small glimpse at others. 




 Fifth one, the Koi are both swimming away.
